Add 1 tsp (5g) of loose leaf sencha per 6?8 oz of water. No strainer required ? the fine fukamushi leaves settle naturally.
Step 2 ? Temperature
Heat water to 167?176°F (75?80°C). Never use boiling water ? high heat destroys the amino acids responsible for umami and sweetness.
Step 3 ? Steep
Pour and steep for 45?60 seconds. Re-steep 2?3 times; each cup reveals a new layer of flavor.
